Cappucino Choc-Chip Bars
These are supergood! Chewy and chocolatey and coffee-y all at once. These are truly some of the best cookies I've had/made in a long time. And so quick and easy to make too. Make some right now! Adapted from Dana Treat Makes 60 square bars 1 cup brown sugar 1 cup butter 1/2 tsp vanilla essence 150ml strong brewed black coffee 1 cup chocolate chips 2 1/4 cup cake flour 1 tsp baking powder 1/2 tsp salt 1. Cream butter & sugar together in a large mixing bowl. 2. Add vanilla essence, coffee and chocolate chips, stirring to combine. 3. Add flour, baking powder and salt and mix well. Transfer to a greased rectangular oventray (36 x 22 cm;14.5 x 8.5 inches), pressing down to spread the batter evenly over the surface. 4. Bake 15 - 20 minutes at 180C. The dough will still be a little soft on top, but will firm up when it cools down. Leave to cool down slightly, then cut into squares and transfer to a wire rack to cool down further. Store in an airtight container.
