Deviled Egg Solution: Potato Angels!

This IS my picture, but NOT my recipe.  For some reason, the author and photographer (me) had an issue with that a couple of weeks ago when someone stole both the recipe and the photo and claimed it as their own in the Examiner.  So we teamed up and had it removed!
Who does that?!

This is one of my favorite recipes, it really is a genius idea! I actually think this recipe is better than real deviled eggs!  While I think their recipe is perfect, I changed mine just a bit to my personal liking, but it is still pretty much the same.  YUM!

Here are the original ingredients, with my preferences in red.

6 New Potatoes (peeled and halved) (I use any small potatoes I can find)
2 Tbsp. Olive Oil (I use an olive oil spray)
4 Tbsp. Vegenaise
1 tsp. Yellow Mustard (I use dijon mustard)
1 - 2 Tbsp. Onion (chopped very fine) (1 Tbsp for me)
Dash Hot Sauce (I use sriracha)
Dash Garlic Powder
Salt and Pepper (to taste)
Dash Turmeric (optional, for color) (I add a few drops of yellow coloring)
Paprika (for dusting)


Instructions (in my words)

Preheat oven to 350 degrees.

Spray a cookie sheet with a non-stick spray.  Using your olive oil or olive oil spray, coat all sides of the potatoes, then lay them face down on your cookie sheet.

Cook your potatoes for 45 minutes.

While your potatoes are in the oven, mix your remaining ingredients together in a small bowl, besides your paprika.

Once your potatoes are finished cooking, remove them from the oven.  If you choose, scoop out a small hole in the middle of the flat side of your potato, resembling where your yolk would be if it were an egg. I find this step optional because they taste the same without the hole and I usually can't wait that long to eat them!

Using a spoon or piping bag, add your mixture to your potatoes. (see photo)

Dust your potato angels with paprika and enjoy!
