The name Mayak Gyeran (마약계란) literally means "drug egg" and clearly, their name doesn't lie: once you've tasted them, it's impossible to stop! With their fragrant marinade of soy sauce, garlic and chili pepper, they explode with flavor and are the perfect accompaniment to a bowl of piping-hot rice (glutinous like sushi).   • Mayak Gyeran - Korean marinated eggs - Preparation step 1Cook the eggs (at room temperature) in boiling water for 6 minutes and 30 seconds.

    *You can cook them for up to 10 minutes if you wish.
  • Mayak Gyeran - Korean marinated eggs - Preparation step 2When cooked, plunge into a bowl filled with cold water and ice cubes to stop the cooking process.
  • Mayak Gyeran - Korean marinated eggs - Preparation step 3Cut green onions, chillies and garlic cloves into small pieces.

    *We used gloves, but this is optional.
  • Mayak Gyeran - Korean marinated eggs - Preparation step 4Place in a soup plate, bowl or airtight container.
  • Mayak Gyeran - Korean marinated eggs - Preparation step 5Add the honey, sesame seeds, salted soy sauce and water and mix well.
  • Mayak Gyeran - Korean marinated eggs - Preparation step 6Shell the eggs.

    *With a teaspoon, tap the egg. Then pass the spoon under the shell and go around the egg to gently remove the shell.
  • Mayak Gyeran - Korean marinated eggs - Preparation step 7Place shelled eggs in marinade. Cover with cling film or reseal the airtight tin and refrigerate for at least 6 hours.

    *If they are not completely submerged, remember to turn them from time to time!

Observations

How long should I marinate Mayak eggs?
You can marinate them for a minimum of 6 hours, or at best overnight, to give them a good taste.

Cooking the eggs:
You can make soft-boiled eggs (6 min30) or cook them a little longer to keep the yolk melting (8 minutes), or even hard-boiled eggs (10 minutes).

Marinade:
You can adapt the quantities of the marinade ingredients. Don't hesitate to use less hot pepper if you don't eat hot food.

How to serve these Mayak eggs?
You can serve them with sushi rice. Add the halved eggs to your rice bowl, drizzle with the sauce and marinade ingredients, and enjoy!


How long can I keep Mayak eggs?
You can keep them for up to 4 days in the refrigerator.
