Dried Fruit and Nuts Loaf
I came across the Dried Fruit and Nuts recipe while I was surfing on the Joy of Baking website. I was immediately curious to try it because it was not similar to the other quick bread recipes I had tried in the past. Even though I did not have all the ingredients listed on the recipe, I used the ones I had on hand. The final result was a tasty and fulfilling loaf that I can eat as breakfast or snack. Ingredients 3/4 cup all purpose flour 1/4 teaspoon baking soda 1/4 teaspoon baking powder 1/2 teaspoon salt 3/4 cup firmly packed brown sugar 3 cups coarsely chopped unsalted cashews 1/2 cup dried cranberries 375 mL dried currant 1/2 cup dried apricots, cut into quarters 1/2 cup dried pineapple 3 large eggs 1 teaspoon pure vanilla extract Instructions 1. In a large bowl, mix together the flour, the baking soda, the baking powder, the salt and the brown sugar. 2. Mix the dried fruits and the nuts with the flour mixture. 3. In a separate bowl, beat the eggs and vanilla until light colored and thick. This step takes several minutes. 4. Mix the egg mixture to the flour-fruit-nut mixture. 5. Let the batter rest in the fridge for about 10-15 minutes. 6. While the batter rests, preheat the oven at 350 degrees F. 7. When the oven is almost ready, take out the batter from the fridge and press it down in a 9 X 5 inch greased baking pan. 8. Bake it for about 60 to 70 minutes or until the batter is golden brown and has pulled away from the sides of the pan. 9. Let it cool. Source: http://www.joyofbaking.com related searches : Dried
