Easy Cheesy Rice
One of Craig's favorite side dishes (ok, his only favorite side dish) is rice. He loves white rice with butter and sugar on it. Me? I'm really not a huge fan of white rice. I'll eat it, but my lovely man could eat it daily if I made it. But tonight I wanted to try something a little different with the rice. This took less than 25 minutes to make and went really well with my BBQ glazed chicken breast. Here's what you need: 3 cups cooked white rice 1/2 cup sour cream black pepper to taste dash of ground ginger 1 cup Velveeta Cheese (cut in cubes) In a small baking dish, put cooked rice, sour cream, pepper, ginger and cheese and mix together well. Bake at 350 degrees for 20 minutes. How easy is that cheesy rice!!! This will go well as a side dish with any meal. Enjoy the rest of your week. Patricia
