My portuguese seafood rice recipe

  • Put one medium size chopped onion with one garlic clove and two tablespoons of extra-virgin olive oil in a pan. Take to stove and fry until the onion is golden.
  • Add chopped tomatoes and cook for 5 more minutes. Use a blender to liquefy tomatoes and onion mixture. Add 4 cups of water (1 liter), green bell pepper and take it to stove again.
  • Add the rice, mix well and after 3 minutes add the seafood mixture. Season with salt and black pepper (pepper is optional).
  • Cover the pan with a lid and let the seafood rice cook for 5 more minutes. Sprinkle with fresh chopped coriander, mix and cook the seafood rice for a couple more minutes.
  • After turning off the stove cover the pan with the lid again because the rice will finish cooking by itself.
