Easy Weekend Lunch
When I am feeling lazy, I love it when I throw things together and they turn out into something tasty and actually fit for human consumption lol! I'm into lazy cooking these days because my short little break from school is over and I am back into full swing with two 3 hour evening classes a week not to mention the full-time job and the feeble attempts to get a life ;-). This tomato soup would be one of those kinds of things. 1 tin of 750g of whole plum tomatoes, chopped (I like Muir Glen) juice of the tomatoes 2 tbsp brown sugar salt and pepper 2 tsp prepared pesto 1 tbsp balsamic vinegar pinch of Italian seasoning mix pinch of clove pinch of cayenne powder 1 medium-sized yellow onion, finely diced 2 cloves of garlic 2 cups of water a dollop of yogurt for serving I sauteed the onion and garlic until they're nicely browned and caramelized then I added the tomatoes and seasoned it with sugar, salt and pepper, Italian seasoning mix, clove and cayenne pepper then I added the water and covered it to cook and simmer for about 3o minutes on medium heat. When it's cooked, I used a hand blender and processed it into a nice soupy consistency and finished it with the balsamic vinegar and pesto.
