Eggplant-Potato curry
I made this Eggplant and Potato curry in a different way then the regular one.I fried the veggies in oil and then cooked with onions n tomatoes.It came really well,we had it with rotis.You can have it even with rice too..
Eggplant/Vankaya-3nos(purple) Potato-3nos medium Chopped onions-1big Chopped tomatoes-1bid Chili powder-1tsp Coriander powder-1tsp Groundnut powder-1tsp Mustard+urd Dal-1tsp Curry leaves Crushed garlic cloves-2nos Chopped coriander leaves Turmeric powder-1tsp Salt to taste Oil-1tbsp Oil for frying Preparation: Wash n chop veggies into cubes and soak in salt water.Drain the water and spread it on kitchen towel to absorb the water. Heat a pan with enough oil for deep frying the veggies.Fry the veggies until they turn into golden colour and remove it on to kitchen towel. Heat a pan again with 1tbsp of oil,add mustard+urd dal,crushed garlic and curry leaves.Once the seeds splutter add chopped onions along with salt and fry till onions changes its colour.Add chopped tomatoes along with turmeric pwd and stir well.cook with closed lid for few seconds,so that tomatoes becomes soft. Add fried veggies along with chili and coriander powder and mix well and cook on high flame for few mints.Then add required water and cook with closed lid till the gravy becomes.Finally add groundnut powder and chopped coriander leaves and stir well and cook for 2mints.Switch off the flame and transfer into a serving bowl and enjoy either with rice or rotis.
