Here's a great zero-waste recipe for using up eggplant: eggplant rolls in the air fryer! We chose to fill them with mozzarella and smoked bacon, but you can also try them with cooked ham or Parmesan cheese. In less than 20 minutes, you'll have delicious eggplant "involtini" with a slightly crispy crust and a meltingly soft filling. Make this recipe by following the steps below :-)

Cut the eggplants lengthwise, thinly (don't cut them too thin or they will be difficult to roll).
Grill the eggplant slices in a pan.
Let it cool, then add a slice of bacon, some grated mozzarella and a pinch of pepper to each slice of eggplant.
Wrap each slice of eggplant with its filling and lightly brush the involtini with a little olive oil (if necessary, secure them with a toothpick).
Place the rolls in the air fryer basket (lined with parchment paper) and cook for 6 minutes at 390°F/200°C.
