Eggplant rollatini parmigiana style
Called involtini alla parmigiana in Italy, these rolls are easy to prepare and everyone will love your meal !
Preparation

Cut eggplant slices lengthwise. Put slices on a baking tray with parchment paper. Add a drizzle of olive oil and some salt and pepper.

Put tomato slices on top. Bake for 35 minutes at 410°F (210°C).

Leave to cool down before rolling. Put a mozzarella slice on each eggplant slice and roll.

Put your rolls in a gratin dish. Cover with tomato sauce and sprinkle some grated parmesan on top. Bake for 10 minutes at 410°F ( 210°C).

There you are, your rolls are ready ! Add a fresh basil leave on top and let's eat !
