Eggplant rollatini parmigiana

Cut eggplant slices lengthwise. Place the slices on a baking tray lined with parchment paper. Drizzle with olive oil, and season with salt and pepper.
Layer tomato slices on top. Bake for 35 minutes at 410°F (210°C).
Allow the eggplants to cool before handling. Place a slice of mozzarella on each eggplant slice and roll them up.
Arrange the rolls in a gratin dish. Cover with tomato sauce and sprinkle with grated parmesan. Bake for 10 minutes at 410°F (210°C).
Your rolls are ready! Add fresh basil leaves on top for flavor and decoration.
