Filet Mignon Bento

Last night, after determining there were no gross dead bodies, I was watching Law & Order Los Angeles with Baby Girl. One of the lawyers in the show is Alfred Molina, so when Buddy happened to walk by and see him, he immediately associated him with the only movie that really matters where Mr. Molina is concerned: Spiderman 2. After a slew of repetitive and similar questions, he finally asks me, “Why is Doctor Octomus Prime a good guy now?”

LOL! I actually had to pause because my giggles were making it hard to hear what was going on. They have yet to grasp the concept of actors, just like they still don’t understand why I can’t make that song come on the radio again. If I so happen to be looking at a picture of Robert Downey Jr., my kids immediately cry out, “Ohhh! There’s Tony Stark!” I’m sure if we ever rent Sherlock Holmes, they’ll be utterly flabbergasted.

Filet Mignon Bento

I am happy to say that I am having what is probably the most decadent and rich bento I’ve ever made in all my years: a filet mignon bento. Having made four big fat filets for Valentine’s Day dinner, we had a whole one leftover. I sliced up the last one and we ate the remaining pieces as I packed this bento for today.

I put about 1/3 cup of rice in as that’s all that was left, then laid four nice, thick slices on top. If you’re grossed out at what looks like undercooked meat in a bento, you aren’t supposed to cook filet well done. Perfectly pink is what I would call this and it tasted simply divine. I added three wild yard tomatoes on top of some of Mr. Pikko’s lettuce.

In the other tier, I have asparagus spears, pickles, a garden strawberry, and slices of a cutie. I refrigerated it overnight and left it out once I was at work at ate it at “room” temperature, which was still quite cold since the air conditioning in my building is almost like a fridge sometimes.

Here’s a closer look at it. Boy do I want to just eat it all over again…….. I bought this box on J-List last year, but I can’t find it now, so it must be out of stock.

Filet Mignon Bento Points Calculation

4 oz filet mignon – 10 points (ouch!) Update: 5 points, trimmed!

1/3 cup rice – 2 points

blanched asparagus – 0 points

fruits & pickles – 0 points

Total: 12 points 7 points

Snacks: 2 small Okinawan sweet potatoes, 1/2 a See’s Walnut Square (!!!)

Weight: 148 lbs

I had totally expected to get on the scale and face a horrible gain back up past 150, but was pleasantly surprised to find that I’d actually lost a smidgen. With all the filet I ate plus a brownie and like 8 chocolate covered strawberries, I had though I was doomed for sure!

I hope everyone had a great Valentine’s Day! Mr. Pikko got me a box of See’s Walnut Squares, my absolute favoristest chocolate items in the world. That’s all I needed to be happy. Actually, finding out each one is only 7 points was awesome too, but I managed to eat only half at work today. ^_^

I still haven’t taken my bike in to get the fender fixed. =\ And I still have Wall-E. :]
