Funfetti Cheesecake Blondies
So I decided I wanted to surprise my mom and make those cheesecake blondies again that she loves so much. But instead of using just any old blondie batter, I decided to use the recipe for funfetti cookies (yes, shame…I used a box mix but come on, nothing beats Pillsbury!). I was really nervous about how they would come out since Pillsbury goes a little skimpy on the amount of batter the mix makes so I made the bars in a 9×9 inch pan instead of a 9×13 inch. But my mom didn’t complain
Funfetti Cheesecake Blondies Adapted from Chocolate Chipped 1 package Funfetti cake mix 1/3 cup oil 2 eggs 1 1/2 cups white chocolate chips Filling 2 (8 ounce) packages cream cheese 1/4 cup sugar 2 eggs Preheat the oven to 350º F (175 degrees C). Grease a 9×9 inch pan In a large bowl, combine cake mix, oil, and eggs. Stir with spoon until thoroughly moistened Stir in white chocolate chips, and set aside In a separate bowl, mix together the cream cheese and 1/4 cup white sugar. Mix in the 2 remaining eggs Spread 1/2 of chocolate chip dough in bottom of the prepared pan. Bake in Preheated oven 13-15 min Pour cream cheese batter on top of dough. Bake 10 min Drop pieces of the remaining chocolate chip batter over filling. Don?t worry if there are gaps; the batter will spread Bake for 30-35 more minutes, or until lightly browned on the top. Let the brownies cool in the pan before cutting into bars (mine got a little crispier than I would have liked)
