Grilled Pineapple Veggie Burger

Good Afternoon!

I am "circling"! This is a family word that we use for taking a situation and go around and around with all the "what if's, but's and "and's about it", essentially "circling" the wagon about it. It is usually a waste of precious time. I am currently "circling" about my yoga sequence in which I have now changed it 3 times since this morning and am more confused than ever! Ahh.... I am thinking way to much into this and need to go back to "the simpler is better" mode.

Morning class went well, some "circling" has ensued and then I made some lunch. I am a subscriber to Hungry Girl's daily email and today she had a swap in which she showed a veggie burger with grilled pineapple on it. It looked tasty and I happened to have everything at hand so whipped up the most delicious and filling veggie burger.

Grilled Pineapple Veggie Burger

1 Boca Burger
1/2 Ezekiel English Muffin
1 Veggie Slice- Cheddar Flavor
1 slice grilled pineapple
small splash of Salt Lick BBQ Sauce

Grill veggie burger and pineapple in a grilled pan sprayed with cooking spray. Grill both for about 5 minutes flipping every so often. Add slice of cheese onto veggie burger and melt. In the meantime, toast english muffin. Remove melted cheese veggie burger and place on toasted english muffin. Add a little BBQ sauce and top with grilled pineapple. Enjoy!

This was absolutely delicious and I am glad that I took at look at Hungry-Girl's email... good idea!

I also got an email from Holey Donut and they are taking $10.00 of their shipping costs... I again went to their site determined to order these "healthy" donuts and even put some in my cart only to discover that I will have to pay close to $60.00 to have a bunch of "healthy donuts" sent to my house and I just could not pull the trigger! I don't really like donuts, don't encourage donut eating in my house and guess I will just have to wait to try one of their famous Coconut Creme Filled Donuts that everyone raves about.

Time to stop circling and get ready to teach Kids In Motion at the Hill Country Fitness. I am looking forward to getting my mind off of my sequence for a little bit!
