Guests for Dinner
It’s the weekend. Woop! Woop! I believe Maddie was just as excited as I was to hear that news. She spent all afternoon doing laps around the apartment, then doing laps outside. And when our guests for the evening arrived she was all about playing fetch and licking them to death.
She loves her Uncle Anthony.
My Sister and her boyfriend Anthony didn’t have plans for the evening either, so I invited them over for dinner. I was in the mood to cook a big meal – in my own kitchen! – and it’s always more fun to cook a big meal for a crowd.
It felt good to really get my hands dirty in the kitchen afternoon. I decided to go with Cooking Light’s Butternut Lasagna because I knew it wasn’t a quick meal and I knew it was a good one. The recipe is an old favorite from college that deserves to come out of hiding once or twice a year.
However, my version of the recipe is slightly tastier than the original. My secret? I add a 1/4 teaspoon of Nutmeg, Cloves, and Cinnamon to the butternut squash mix. If gives the lasagna a hint of spice that really brings our the delicious squash flavors.
My table set up needs a little work. We should probably start with 1. a bigger table, 2. matching place mats, and 3. more chairs.
No one seemed to mind though. I think they were all there for the food anyways.

I didn’t cook the butternut squash long enough before layering it in with the lasagna so there were a few chunky pieces, but besides that it was rather tasty.
On the side we had a simple salad with mixed greens, tomato, mushroom, and a sesame dressing.
And some homemade garlic bread.
All I did was slice a multi-grain baguette in half and toasted it with some olive oil, garlic salt, and parmesan cheese for a few minutes.
After dinner we headed to Menchie’s for a sweet treat. Kelly had a couple of BOGO coupons that were set to expire on 10/31 and we couldn’t let them go to waste, could we?
In the spirited of Halloween the usual flavors had been replaced with Halloween themed labels. Which would you prefer the Trick-or-Tart or the Vampire Vanilla?
