Healthy Chocolate Aztec Cupcakes
I recently had a reader ask me if there were any low fat, healthier dessert and snack options that I may post, especially for those who are on a diet or who are taking a more health conscious path. I am excited about collecting healthy, easy and delicious desserts and snacks which of course will be researched in my *lab* for my own family to try. This first recipe is a healthy, Aztec Chocolate Cupcake recipe. It has no dairy in it, so not only is it low fat but it is also vegan! Chocolate cake recipes normally call for milk, butter and eggs, which is very high in fat but this recipe has none of those ingredients making this not only low fat, but is also for those people who are lactose intolerant. This cupcake recipe is very moist, so you do not need to add frosting~ Using whole wheat flour, walnuts and cocoa it is perfect for those on a anti-inflammatory diet as well as being nutritious. This cupcake can also be made into a cake if you would prefer and if you want an added Mexican flair to this, just add in some cayenne pepper and cinnamon. It will not over spice the cake, but will give it that extra kick and exotic taste, just like the original Aztec Chocolate Drink!~ Aztec Chocolate Cupcakes (This chocolate cake recipe is adapted by Angie Guion for Mexican Chocolate Cake originally found in the magazine Real Simple.)3/4 cup - whole wheat flour 3/4 cup - all purpose flour 1 cup - sugar 1/2 cup - unsweetened cocoa powder 1 teaspoon - baking soda 1/2 teaspoon - salt 1 cup - cold water 1/4 cup - canola oil 1 tablespoon - balsamic vinegar 1 tablespoon - vanilla extract 1 handful - chopped walnuts Combine all cake ingredients in a mixing bowl. Stir until smooth. Pour into greased and floured cupcake pan or cake pan. Cook cupcakes 14-16 minutes in a preheated 350-degree oven. Cool muffins on a wire rack for 20 minutes.A cake in an 8-inch pan cooks in about 25-30 minutesNotes: If you are allergic to waluts, then you may omit them. Also, if you are allergic to wheat, then you can omit the whole wheat flour and use all-purpose, or cake flour instead. This recipe has unsweetened cocoa in it, which is packed with nutrients. Much like dark chocolate, unsweetened cocoa powder has many flavonoids and antioxidants that boost your health. Cocoa powder is made from the ground seeds of the cacao tree.
