Unroll the puff pastry. Place the chocolate bar in the center. Cut strips from each side of the bar following the outline of the squares.
Cut the other two ends along the length of the bar. Remove the scraps. Fold the strips towards the center, overlapping them from left to right. Brush with egg yolk.
