I Heart Bob's Red Mill GFCF Pizza Crust

Oh how I love Bob's Red Mill, let me count the ways...Because of their wonderful packaged pizza crust mix I thankfully do not have to make everything from scratch for my beautiful babies on the GFCF diet. Oh how wonderful is the convenience and its made with healthy ingredients too! So I have a few tricks that I'd like to share that help make the mix super yummy!





Basically I follow the instructions on the package when I'm making the dough, except I follow the no egg version, also recommended on the package. I also like to add garlic powder which makes it even better, really you could go crazy and add herbs and all kinds of stuff! One thing I do that is different is I split the package in half to save waste. I found that I was making the whole package and only using part of it and throwing the rest away, not good when buying expensive gluten free mixes. So here's what I do:





Bob's Red Mill GFCF Pizza Crust Mix


1/2 package (1 1/2 cups) pizza crust mix (store the rest in the original bag, clip & put in fridge)


1 Tb. flax meal plus 3 Tb. water (egg replacement)


3/4 cup water (room temp)


1 Tb. extra virgin olive oil


1/2 tsp. garlic powder


1/2 (1 1/8 tsp) package of yeast (the one that comes in the mix, put other half back in package)





In tiny bowl put flax meal and 3 Tb. water, let sit. In bowl of stand mixer put 3/4 cup water and 1/2 package of yeast, let proof for a few minutes. Next add rest of ingredients and mix on low until blended then on high for about 30 seconds. The dough will be moist, scoop out of bowl using a spatula sprayed with GFCF cooking spray (I love Pam original) and place in bowl drizzled with olive oil. I like to make it ahead of time and allow the dough to sit, I feel that it makes for a better crust. This mixture makes 4 small child size pizza crusts which I peel off what I need and store the rest in the fridge, it will keep there for several days! I use the sprayed spatula to form and shape the dough, drizzle with olive oil and bake it on parchment paper in the oven at 400 degrees for about 8 minutes or so until lightly baked and just barely browned, add toppings and bake again for 5 minutes or until toppings and pizza are done. Voila it is that simple, really ;)) Blessings!
