Iced Peach Tea

I mentioned in my previous post that we have been craving refreshing dishes over the past few weeks with the unusual long hot humid summer in Auckland. I?m certainly not complaining, I love this weather, I seem to be the only person still tucking up at night with a duvet while everyone else is sweltering, I’m basking in the humidity!


This is a very quick iced tea made from fresh peaches, it can be held in the fridge for a day or two but no longer. You can use any ripe stone fruit with this method, it does have more slightly more texture than shop bought due to the strained pulp but it is very refreshing with little additional added sugar, if at all any.



Ingredients



4 very ripe peaches
1 peach for slicing and serving in the tea
4 tsp Ceylon tea (or whatever your preference is)
4 cups boiled water
Manuka honey to taste

Method



Push the peaches through a sieve into a large bowl, leaving only stone and skin behind. If the peaches aren?t ultra ripe whiz them up first in a blender or food processor and then strain through a sieve.
Place the tea bags into a tea pot and add the boiling water and brew for 5 minutes.
Add the tea to the peach puree and taste. Add honey to sweeten if required.
Place in fridge to chill.
Remove the stone of the fifth peach and slice into wedges and put into a large jug with 2 cups of ice cubes.
Pour the chilled tea over the peaches and ice and serve.
You can use any ripe fruit or berries in this way.
