Japanese Cucumber-Nori Salad
If you're looking for an extremely low-calorie yet tangy and tasty salad, this Japanese inspired cucumber salad is an excellent choice. You can experiment with different seaweeds....wakame, hijiki, arame-whatever you prefer.
Difficulty Level: Easy What you need: 1/2 nori sheet 1 cucumber, peeled, seeded and sliced thin 1/8 cup green onions, diced 1/8 cup carrots, sliced thin 1 tsp. ginger root, chopped juice of 1/2 a lime 1 tsp. toasted sesame oil 1 tsp. rice vinegar 1 tsp. soy sauce 1/4 tsp. red pepper flakes sea salt, to taste What to do: Cut nori into thin strips and let them sit in a bowl of warm water. Place the cucumbers, green onions, carrots and ginger root in a serving bowl. In another bowl combine the lime juice, sesame oil, vinegar, soy sauce and red pepper flakes. Pour dressing over veggies and mix well. Drain the seaweed and add to salad. Season with salt and serve whenever you wish. related searches : Japanese
