Kosheri

Kosheri is a classic Moroccan dish. Is is light and nutritious. It is easy to make when you have lots of guests. For us it seems to be a rather strange mix of ingredients. Noodles, lentils and rice. Kosheri is served with a spicy tomato sauce.



Preparation time: 40 minutes
easy recipe

Ingredients for the sauce:

a large tomato
4 cloves of garlic
some tomato paste
Chili
Cumin
Some olive oil
some vinegar
Coriander leaves
Salt and pepper
Ingredients for the Kosheri:
300 gram lentils
200 gram Basmati rice
40 gram butter
50 gram Spaghettini
400 ml vegetable stock
nutmeg
cinnamon
2 onions
salt and pepper


Preparation:

Soak the lentils over night.


Drain the lentils and boil them for about 10 minutes. They are supposed to be “al dente” and not too soft.


For the sauce chop the garlic and fry it with some chili in olive oil. After 2 minutes add the diced tomato, some paste, Water, cumin and vinegar. Let it simmer on small heat for 20 minutes. Season with salt and pepper, add the coriander leaves.


For the Kosheri wash the rice.


Break the pasta into small pieces and fry it in butter until golden brown. Put the rice into the pot and mix with the pasta. Add nutmeg and cinnamon, salt and pepper. Add the soup. cover and let it boil on small flame for 10 to 12 minutes. Then take off the heat, cover with a towel. Put the lid back onto the pot and let it sit for another 5 minutes.


While the rice is cooking, cut the onions into thin slices and fry them until they are dark brown. This may take up to 20 minutes.


Take the lid off the pot, remove the towel. Mix the lentils with the rice. Add the onions. keep some for decoration. Pour the mix ontop a platter or dish. Decorate with the onions and serve with the tomato sauce.
