Leftover Chicken and Rice Biryani
This recipe cooked from leftover chicken and rice. This is a nifty way to use up leftover chicken and rice. You don?t need to use the same type of chicken in this either. Use different - different varieties of chicken recipe and this actually gives you a different taste every time and believe me, it turns out great. Ingredients: 2-cups leftover chicken4-cup left over rice2-chopped tomatoes1- large chopped onion1- tbs ginger-garlic paste5- tbs chopped mint leaves2-bay leaf3-red whole chilly5-clove/ long5-black pepper1-tsp cumin seeds1-tsp shahjeera/ caraway seeds2-nos cardamom1- stick of Cinnamon4-tbs chopped coriander/ cilantro leaves4-tbs clarified butter/ deshi ghee4-eggs (optional) salt to taste Heat oil in the pan and put all whole and dry spices. When they start to splutter add onion and fry them till they turn translucent.Add ginger garlic paste and fry them for a while.and cover it for 2 minutes.Add chopped tomatoes, 3tbs of mint leaves and 2tbs of cilantro leaves and fry them till they start leaving oil from the pan.Add chicken and rice and mix it well and cover it. Cook for 3 min Now Chicken Biryani is ready. Garnish with cilantro and mint. You can garnish with boiled eggs too. Hope you all enjoy this biryani. And do make it with different types of chicken curries every time to give you different flavour every time. Note: If your chicken curry is spicy then do not add any more spice to the biryani. Adjust the spices according to the spice in your curry.
