Leftover Turkey? Make White Chili!

If you still have leftover turkey...here is a super simple recipe to reinvent your leftovers.  Now that I think about it, Thanksgiving was almost a week ago, so all your turkey might be gone.  If this is the case, no worries, just use a pound of ground turkey or ground chicken.  Or you can roast two chicken breasts and chop them up into bite size pieces, or you could roast an entire chicken and use the meat from that, or a rotisserie chicken from the grocery store.  I think you get the point, and chicken or turkey will suffice.  (Or omit the meat all together and use tofu...ok I will stop now!)

White Chili
-2 cups of leftover turkey
-1 can of cannellini beans (aka white kidney beans)
-1 yellow pepper, diced
-1 medium onion, diced
-3 cloves of garlic, minced
-2 cups vegetable (or chicken) broth
-1 cup of macaroni (measure when dry)
-1 cup of yellow grape tomatoes (if you are unable able to find these, you can use big yellow tomatoes and chop them, or red ones...but then it wouldn't be "white" chili)
-1 1/2 cups corn kernels
-1 tablespoon cumin
-1/4 teaspoon cayenne pepper
-1 tablespoon dried oregano
-a handful of fresh chopped cilantro
-1 tablespoon ground coriander
-salt and pepper


1. Sauté the onion, pepper, garlic in some olive oil. Add the turkey and tomatoes and cook for a minute. Then add the broth and bring to a boil. Add the macaroni reduce heat and cover.
2. After about 10 minutes, the macaroni will be cooked, so stir in the beans, corn, spices, salt and pepper, and fresh cilantro. Allow to cook for another 10 minutes or so.
3. Top with cheese or sour cream before eating.
