Leftover Turkey? Make White Chili!
White Chili -2 cups of leftover turkey -1 can of cannellini beans (aka white kidney beans) -1 yellow pepper, diced -1 medium onion, diced -3 cloves of garlic, minced -2 cups vegetable (or chicken) broth -1 cup of macaroni (measure when dry) -1 cup of yellow grape tomatoes (if you are unable able to find these, you can use big yellow tomatoes and chop them, or red ones...but then it wouldn't be "white" chili) -1 1/2 cups corn kernels -1 tablespoon cumin -1/4 teaspoon cayenne pepper -1 tablespoon dried oregano -a handful of fresh chopped cilantro -1 tablespoon ground coriander -salt and pepper 1. Sauté the onion, pepper, garlic in some olive oil. Add the turkey and tomatoes and cook for a minute. Then add the broth and bring to a boil. Add the macaroni reduce heat and cover. 2. After about 10 minutes, the macaroni will be cooked, so stir in the beans, corn, spices, salt and pepper, and fresh cilantro. Allow to cook for another 10 minutes or so. 3.
