Lime and coconut cookies with white chocolate chips

After my car fiasco last weekend, the repair shop called to tell us it would be almost as expensive to fix my car as my car was actually worth.  My parents weighed the pros and cons of fixing the car or ditching  the car, and ultimately decided the Black Beauty (what I lovingly named her) just wasn't worth it.  So I said goodbye to Black Beauty I and said hello to a new car.  


My parents are beyond amazing and helped me buy the car, which I am so so so grateful for.  I went home this weekend to pick it up, and headed back Sunday without a single worry that my car would have any problems.  That is, until coming up over a hill on the interstate I was greeted with standstill traffic and the cars ahead of me slamming on their brakes.  I tried to do the same and as the car in front of me swerved into the shoulder to not hit the car in front of it, there was no choice but for me to take my (brand new!) car into the ditch to avoid an accident.  I'm lucky I did because the car behind me ended up getting hit.  Thankfully no one was hurt and there was no damage to my car, but there I was again...struck on the side of the highway.  Since I am very practiced at calling my insurance company, I knew exactly what to do to get towing services to my rescue.  Unfortunately, I was stuck in my car for a half hour waiting to be towed out of the ditch.


Lime and coconut cookies to the rescue!!  I just so happened to have a ziploc baggie full of these cookies to keep me company during my wait.  They were the perfect sugar fix to calm me down, which got me thinking that I should always have an emergency stash of homemade cookies in my car.  They were also helpful for showing the tow truck driver how thankful I was that he was working on a Sunday.  Lesson learned: cookies make everything better.  These cookies especially make life better because they are such a yummy combination of flavors.  They look like your standard sugar cookie at first glance, but they have a hint of lime flavoring that makes them oh-so addictive.  The coconut makes them even chewier, and I added white chocolate chips because it just sounded like a good idea.  It was. 


Lime and Coconut Cookies with White Chocolate Chips

2 2/3 cups all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup (2 sticks) unsalted butter, at room temperature
1 1/2 cups granulated sugar
1 egg
1/2 tsp pure vanilla extract
zest of one large lime
3 tbsp fresh lime juice (this was exactly 1 lime for me)
1/2 cup toasted coconut
1 cup white chocolate chips
1/2 cup sugar for rolling cookies


Directions:


Preheat oven to 350 degrees F.  Line cookie sheets with parchment paper.  


Toast coconut until lightly brown and fragrant (5-7 minutes)


In small bowl, whisk together the flour, baking soda, baking powder, and salt.  Set aside.


In large bowl, beat together the butter and sugar until smooth, about 3 minutes.  Add in the egg, vanilla extract, lime juice, and lime zest, and beat until well combined.  


Gradually add in the dry ingredients(okay, I admit it...I just dumped it all in at once).  Lastly, fold in the toasted coconut and white chocolate chips and mix until evenly distributed.  


Roll rounded spoonfuls of cookie dough into balls and roll in sugar.  Here's what my balls looked like:
I'd say they were about a tablespoon in size.  Bake cookies 8-10 minutes, or until lightly browned.  Mine took closer to 10 minutes each batch.  The cookies will look slightly cracked.


Let the cookies sit on cookie sheet for three minutes, then move them onto a cooling rack.
