Pita Pizzas

“Make Your Own” Pita Pizzas was a wonderful way to spend a Friday night! It was the perfect combination of staying in and relaxing, but I did it at someone else’s house, so I was technically “out.” :)

The prep also included drinking a big ol’ glass of pinot grigio. Throughout the course of the night, I drank more than half of this bottle myself! What is it about Friday nights and wine?! Is my work week really that stressful? 



We used Joseph’s Flax, Oat Bran, and Whole Wheat Flour 6″ pitas for the pizza “crusts.” These babies are just 60 calories, super soft, tasty, and an excellent source of omega-3’s. They are typically my “go to” pitas.



Each of us each prepared our own pita pizza. Toppings included: green peppers, onion, grape tomatoes, broccoli, pepperoni, marinated artichoke hearts, feta, and shredded sharp cheddar. Here’s Becca (in her new apron - isn’t it cute!?) preparing her pizza.

These were so fun to make! Everyone had their choice of toppings and could add as much or as little pizza sauce, cheese, etc. The pita pizzas are also low-cal, nutritious, easy to make (just pop in the oven on 350* for 15-20 minutes), and delicious! Pita pizzas are most definitely a crowd-pleaser! :)



In addition to pita pizzas, dinner also included a garden salad made with bagged spinach and lettuce, tomatoes, mushrooms, green peppers, broccoli, onions, and croutons. Delish! 



I served myself a healthy portion of salad, which I topped with a little drizzle of balsamic vinegar.

While being a somewhat “light” meal, these healthy pita pizzas filled me right up. My stomach wasn’t too, too full, and my brain was satisfied– a perfect balance of the two. 



Of course, I was craving something sweet after dinner. Luckily, Lauren saved the day with a package of Raisinets. I split the package with the girls, but even just a few chocolate-covered raisins did the trick.
