Mediterranian Salad & Oat flakes cookies

Ciao Ciao lovelies!
Winter in Ryadh .Saudi Arabia is simply gorgeous, every morning watering my little garden have been delightful and therapeutic, spending time in a garden shown to positively affect a person's emotions and improve their sense of well-being. Access to nature balances the circadian rhythms, lowers blood pressure, reduces stress while absorbing vitamin D! Feels good to watch the tiny seeds turn to a green carpet and when the water hits the dirt, that smell is the best part of the therapy!
I have been drinking real juice till lunch, I need more mental preparation for juice till dinner, not in the right mood. I have been looking for an Excalibur but no chance really to get it from a store so I will have to check cybershops! Enjoying salads, juices and the warm sunlight.
This salad reminds me of home ( minus the boiled potatoes), we used to take it for the beach days but there were always fried sardines with it!
It's actualy a perfect takeaway, easy to make and get juicier if you let it marinate, the recipe makes 4 servings, ideal to store, to takeaway or share with friends.

1 cup organic corn
1 Red pepper
1 Yellow pepper
1 tomatoe
1 tiny red onion
1 sundried tomatoe
3 fleshy black olives
Coriander
juice of 1 lemon
2 teaspoon organic olive oil
1 teaspoon dried organic basil
sea salt & paprika
Dice all ingredients, add lemon basil, oil & spice. Mix well.

I enjoyed making these as well, one is enough to satisfy your sweet tooth, keep them refrigerated and reach for one when you need a sugar high!

For 10 cookies
1 cup Large oat flakes
1/2 cup raw almond
1/2 cup raw pecan
       1/2 cup Medjool date (or any soft type)
1/2 lemon juice
   1 teaspoon coconut oil
     pinch of cinnamon
    pinch of sea salt
Pulse nuts in food processor until crumbled. Add dates and pulse a few more times. Transfer to a bowl, add coconut oil, cinnamon,sea salt & oat flakes.Mix with a wooden spoon.
You can add a small amount of any chopped dried fruits!
Make the cookies the size of your choice and refrigerate.
