My Creamy Cheesy Flan
We have a very popular dessert in the Philippines and we call it Leche Flan. My interest for cooking and baking has brought me to know more about food. Leche Flan is a dessert from European countries and since the Philippines has been under the Spanish Regime for quite sometime, our cuisine is greatly affected, improved and changed, While growing up, I always thought of Leche Flan as a Filipino food, it was later on when I understood that there are more Filipino foods brought by countries who colonized our government and our people. Leche Flan comes in different ways or version and it depends upon the country where you live.I learned that Mexico and Spain has a very similar Leche Flan like in the Philippines. Leche is a word which means milk. My Creamy Cheesy Leche Flan is a different one.. obviously I added Cream Cheese which makes it sweet and cheesy. I made Leche Flan before but it is always the Pinoy style. Basically the Pinoy style consist of evaporated milk, condensed milk, caramelized brown sugar and egg yolk. Hmmnn..I'm beginning to salivate already. I have a friend who now lives in U.S, and she is known for her Leche Flan with Yam and Sweet Coconut! I don't know how she manage to do it..but it is creamy with lots of milk and also very full because of yam and young coconut.. Oh terrible, I miss those days! Ingredients: 1 cup water 1 cup brown sugar 1 package (8 oz) light cream cheese, softened 4 large eggs 1 can (12 oz) evaporated milk 1 can (14oz) sweetened condensed milk 1 tsp vanilla extract In a saucepan, whisk together water and sugar,make sure sugar is melted. Heat the mixture and let it boil. Once the mixture boils, turn the heat to low and simmer the mixture for 10 to 15 minutes or until it becomes syrup. Pour mixture in a 9' deep dish pan or in any type of moulder pan that you like. In a mixing bowl, beat cream cheese until soft and fluffy. Add eggs one at a time Then pour condensed milk and evaporated milk and vanilla, mix well until combined. Transfer the mixture to the dish pan with caramelized sugar. Use roasting pan when you bake the flan , put some water in the roasting pan ( just enough.. at least half filled) and then put the dish pan with the mixture. Bake at 350 or 180 for I hour if you use large dish pan and 45 minutes if you use individual dish pan. I always messed up my caramelized sugar.. I dont get it ...but its yummy and creamy! I made two sets and this morning... theres only 2 or 3 tbsp left. We all love Leche Flan! related searches : Creamy
