Orange Honey Muffins... Guest Post by Liz at Hoosier Homemade

Orange Honey Muffins Thank you so much Lisa, for having me on your blog today. I?m just thrilled to be here. Muffin or Cupcake??? That is the question of the day While attending Blissdom recently in Nashville, my dear friend Dawn, gave me a huge bag of goodies, in the bag was an awesome baking cookbook, Cupcakes, Muffins and Baked Goods. She knows me so well My thoughts?muffins, even without the topping? Ingredients for Muffins: 1/2 cup Flour 1/4 teaspoon Cinnamon Pinch of Ground Cloves Pinch of Nutmeg 6 tablespoons Butter, softened 1/2 cup Sugar 1 tablespoon Honey Rind of 1 Orange, finely grated 2 Eggs, lightly beaten 3/4 cup Walnuts, chopped finelyIngredients for Topping: 1/8 cup Walnuts, chopped finely 1/4 teaspoon Cinnamon 2 tablespoons Honey Juice of 1 OrangeDirections: Preheat oven to 375 degrees. Place 12 cupcake liners in a muffin pan. Sift flour, and spices and set aside. Cream butter and sugar in a separate bowl until light and fluffy. Beat in honey and orange rind, then gradually add eggs, beating well after each addition. Fold in dry ingredients. Stir in walnuts. Divide batter into liners. Bake for about 20 minutes or until a toothpick inserted in the center of the muffin, comes out clean. For the topping, mix together walnuts and cinnamon, set aside. Combine honey and orange juice in a saucepan, heat gently, stirring until combined. When the muffins have almost cooled, prick the tops all over with a fork and then drizzle with the warm honey mixture. Sprinkle with walnut mixture. Note: I only got 8 out of 1 batch, although with all the baking I do, 8 was really a good number. You can easily double the recipe to fit the size of your family. So?what?s your opinion?
