A fluffy, brioche-like base and juicy, lightly caramelized plums... Let's face it, this brioche plum tart is the comforting late-summer dessert we've come to love at tea time or Sunday brunch. Less classic than the tarte sablée, but just as easy to make (if not more so!), it beautifully showcases seasonal plums, while offering an ultra-soft base that we'll want to nibble on even on our own ;)
Ingredients:
The brioche dough :
- 2.5 cups flour
- 1 teaspoon salt
- 1/4 cup sugar
- 0.5 oz fresh baker's yeast
- 3 eggs
- 2/3 cup butter
Topping:
- 1.75 lbs plums
- 1/2 cup liquid cream
- 2 egg yolks
- 1/2 cup sugar
- 1/2 cup almond powder
- 1 tsp vanilla extract
