Preparation
Mix the cherries with the corn starch, sugar, and lemon juice.
Line the pie pan with one puff pastry sheet, prick the bottom with a fork, and pour in the cherries.
Unroll the other pastry sheet and cut strips 2 cm wide using the pastry wheel.
Place 4 strips vertically on the tart, and lift 2 of them as shown in the photo. Place another strip horizontally, and fold the 2 lifted strips over it.
Lift the 2 strips under the horizontal pastry strip and place another strip on top. Fold the strips back again. Repeat this process to form a lattice pattern over the cherries.
Beat the egg and brush it over the puff pastry. Bake for 40 minutes at 350°F (180°C).
