Pandan Chiffon Cake (Nyonya Food)

Last Wednesday, as early as 9.30 am, I went to Nilai 3 with Maz Bahrain, the proud owner of the blog Ilham Dapur . She wanted to get something for her house and asked me to accompany her which I gladly accepted. And I had to pay a price for my willingness! I ended up buying curtains for my house, just the downstairs. Anyway, I think hubby will be happy because then, he won't have to bring me to shop for curtains for Eid! Hahaha... We had a swell time there, especially when we have Noni, my friend, with us to be our tourist guide. Noni is staying at Seri Putra and she's very familiar with Nilai 3. Thank you so much Maz for asking me out and Noni for your kind assistance. We shall do this activity more often, don't you think so? *wink* *wink*

And since Maz really enjoyed the Orange Chiffon that I had given her the day before, I just had to bake this Pandan Chiffon and gave her a some... It's the exact recipe from Nyonya Food. Thank you so much dear for this lovely recipe and allow me to post it here for others to share. Again, the cake doesn't look perfect, but the taste is! Don't believe me, try baking it yourself!


Pandan Chiffon

PANDAN CHIFFON CAKE

Ingredients

Step 1:


8 medium egg yolks
2oz fine sugar
2oz Pandan Juice ( I mixed water, pandan essence, coconut pandan paste and green food coloring)
3oz corn oil or olive oil
5oz self raising flour

Method:

Beat egg yolk and sugar lightly with a hand whisk till sugar dissolve.
Stir in pandan juice and corn oil.
Fold self raising flour into egg mixture.
Set aside.

Step 2:

Ingredients:


8 egg whites
5 oz fine sugar
pinch of salt

Method:

Beat egg whites till frothy. Slowly add in sugar and pinch of salt while beating at high speed.
Beat until the egg white is stiff and shining but not dry. ( About 3 minutes)

Step 3:

Preheat oven at 175 degrees Celsius.
Use a spatula and gently fold egg yolk mixture into the egg white mixture(meringue).
Pour into an ungreased 25cm tube pan.
Bake for 40-45 minutes.
Once cake is cooked, remove cake from oven immediately and invert pan onto wire rack. Let it cool before removing cake from pan

Note :
I made half the recipe and baked it in an ungreased 18cm tube pan.

And these were the cupcakes ordered by my aunty's friend.
