Durian cake

5 pieces (about 300g) durian flesh -lightly crumbled/mashed

100g palm sugar - boil with 1/2 cup of water to get a thick syrup

1 cup butter

1/2 cup milk

2 cup all purpose flour

1 tsp baking powder

1 tsp baking soda


  • Cream butter, eggs and milk together until light and fluffy.
    Pour in the palm sugar and gently stir in.
    Fold in the shifted flour, baking soda and powder.
    Add in the durian flesh and continue to fold in.
    Preheat oven at 200c for 10 mins.
    Line baking pan with parchment paper covering all corners (size of pan depends on how thick or thin you would like the cake to be)
    Bake for 1/2 hours or until the cake is cooked.
    Allow the cake to be completely cool before cutting in shapes/sizes you prefer.

Soft and moist and taste delicious. Very easy to make.
