Peanut Butter and Strawberry Jam Brownies
![]() These are so good! Step1 blend together: 1 tsp. pure vanilla extract 1/2tsp. pure coconut extract 1/2 tsp. pure almond extract 2 TB. organic peanut butter (smooth and unsalted) Add a small amount of water to help blend. Set aside. Step 2 in small bowl whisk: 3 tsp. egg replacer (I originally wrote TB but have correct this to tsp.) 2 TB warm water When this is thoroughly combined add in: ½ cup natural unsweetened applesauce Mix well and set aside. Step 3 in medium sized mixing bowl whisk: ½ cup white flour ½ cup white whole-wheat flour 3 TB brown rice flour 1 tsp. baking powder ½ tsp. salt 1/8 tsp. cinnamon ¼ cup unsweetened cocoa powder 1 cup raw organic sugar (more if you want it sweeter) Step 4: Combine the wet ingredients (step 2) with the dry and mix well. Add 3 TB strawberry jam of your choice. (I use an organic brand with no HFCS) Raw pecan pieces, optional.
Grease and flour an 8x8 brownie pan and spread the batter well. Bake at 350 degrees until done: approx. 25-30 minutes depending on oven. Dust with powdered sugar, optional but pretty! Very moist and fudgy - ultra good!
