Peanut Butter Banana Cookies
These Peanut Butter Banana cookies are fit for "the King" Elvis would have loved them!
1/2 cup granulated sugar 1/2 cup packed brown sugar 1/2 cup chunky peanut butter 1/2 cup butter, softened 1/2 small over ripe banana 1 large egg, beaten 1 cup unbleached white flour 1/4 cup whole wheat pastry flour 2 Tablespoons milled flax seed 3/4 teaspoon baking soda 1/2 teaspoon baking powder 1/4 teaspoon sea salt Cream sugars, peanut butter, banana, butter and egg in large bowl. Combine dry ingredients well and beat into wet. Cover and refrigerate about 2 hours or until firm. 2 Heat oven to 375ºF. 3 Scoop dough into tablespoon sized balls. Place about 2 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with fork dipped into water Bake 9 to 10 minutes or until light golden brown. Cool 5 minutes; remove from cookie sheet. Cool completely on wire rack. Beat until light and fluffy! Because of the baking powder, soda and eggs, the cookies with have a delicate crumb Use a damp fork to flatten and create the traditional crosshatch design Cool for a few minutes befor removing to a rack to completely cool These won't last long!
