Penne Pasta with Peppers and Sausage Recipe
This is a fast and easy meal that kids and adults will enjoy. I like making this on the week days because it only takes about 40 minutes. Just add a tossed salad, and voila, dinner. Make extra, and voila voila, lunch for the next day. I like double-duty meals. Makes life easier. Note: This recipe was originally printed in Parents magazine. I've made a few alterations to the original recipe. Penne Pasta with Peppers and Sausage 2 tsp. olive oil1 lb. sweet Italian sausage1/2 onion, chopped1 small green bell pepper, sliced into strips1 small red bell pepper, sliced into strips1 c. water1 14.5 oz. can diced tomatoes1 T. dried basil1 tsp. dried oregano1 tsp. garlic powder1 tsp. Worcestershire saucesalt and pepper, to taste16 oz. penne pastaHeat skillet over med-high heat. Add the oil and sausage. Brown all sides of the sausage. Add onion and cook for 1 minute. Add bell peppers, water, tomatoes, basil, oregano, garlic powder, Worcestershire sauce and salt and pepper. Cover. Bring to a boil and simmer for 10 minutes.Take out the sausage and make crosswise slices. Put them back in the skillet and simmer uncovered for an additional 20 minutes. Meanwhile, cook pasta until al dente. Drain the pasta and add it into the skillet with the sausage mixture. Combine all the ingredients.
