Salmon penne with vodka sauce

Ingredients

Number of serving: 4
1/2 cup butter

1 onion, diced

1 cup vodka

2 (28 ounce) cans crushed tomatoes

2 teaspoons oregano

1/4 teaspoon cayenne pepper

2 tablespoons sugar

1 pint heavy cream

1 pound of skinless salmon fillets

12 ounces of whole wheat penne pasta

Preparation

  • Saute' onions in butter until transparent and slightly browned.
  • Add the vodka to the onion mixture and simmer for ten minutes.
  • Add the tomatoes, oregano, cayenne pepper and sugar and simmer for 30 minutes.
  • Add the cream and simmer for an additional 30 minutes.
  • Cube the salmon fillets. Saute' in a separate pan with a small amount of butter until cooked through.
  • Prepare your pasta according to the directions on the box.
  • Once your sauce is complete, toss with the salmon, noodles and sauce together.
