Perfect Roast Potatoes
It's taken me a while, but I think I have finally nailed the perfect roast spud.... Still not as good as my best friends mum, but getting there :) For perfect potatoes every time, just follow these simple steps: Preheat your oven to 200 degrees. Peel and chop your potatoes into quarters, place in a pot of cold salted water and bring to the boil. Cook until just tender, drain, then give them a bit of a shake up in the pot with the lid on (this helps rough up the edges to give you more crispiness) and transfer to a baking tray. Drizzle liberally with extra virgin olive oil and toss to coat, then sprinkle generously with sea salt. Roast the potatoes, turning regularly, until golden brown and crispy. This should take 30 - 40 minutes. They will be fluffy and delicious on the inside! Sprinkle with a little extra sea salt to serve. Serve up with you favourite roast meat and a nice glass of wine - superb!! related searches : Perfect
