PETA?s Vegan College Cookbook is a fun one to flip through, chock-full of interesting and very simple recipes.

Its easy breezy recipes are perfect for the less-than-enthused cook who wants to chow down on something tasty and quick with bare minimum prep and wait time in the kitchen. No foreign ingredients here, as the recipes have ingredients that are easy to find in a standard grocery store and most of them are probably already kicking around in your cupboard.

I have yet to make any others, mainly because I?m terrible at following recipes, but I have flipped through the cookbook countless times and ended up with some meal inspirations that were based on recipes I saw. I also have plans to make a large bunch of recipes in the PETA?s Vegan College Cookbook in the near future, as I have a ridiculous number of them flagged and waiting to be thrown together. I actually ended up flagging so many that I only got through flagging the first half of the cookbook and then gave up since I ran out of taggies. I think I should have just flagged the ones that didn?t appeal to me, I would have saved some sticky notes!


 


Whether you?re vegan or not, the book has some great ideas for when you?re feeling completely brain dead and have no idea what to make yourself when in need of some good eats. Just a quick flip through offers up plenty of tasty eats suggestions (even if you don?t really need a recipe for a basic peanut butter sandwich?).


Being that I?m not vegan and do not have a fridge stocked full of vegan cheeses and mayos, I found a slightly-too-heavy focus on fake vegan versions of products that I don?t really have any intentions of going out to buy. That being said, any of the recipes can easily be substituted with regular, non-vegan alternatives and still turn out just fine, even if not quite vegan-friendly. This cookbook is therefore just as easily pleasing to vegans and non-vegans alike.


One of my favourite aspects of this book is the fact that the recipes are all very quick since they are student-geared and require only a microwave to cook them up. I am sometimes often slightly impatient, especially when it comes to waiting for food to be done cooking, so the fact that virtually any of the recipes can be made and ready in less than 10 minutes is a huge plus for me.


As has been noted by others, if you?re experienced in the kitchen and love to cook up a good and fancy meal from scratch, you may be scratching your head at simplicity of the meals in here. And many of the serving sizes don?t seem to make a whole lot of sense since when reading through the ingredients list of some of them I figured I could probably get double the amount of servings that they suggested. That being said, you obviously don?t have to eat the amount they suggest for serving size (so you could have even more for leftovers!) and even though I sometimes like to make a challenging recipe with more complicated ingredients, I also more often like to have quick and easy meals to make so I love browsing through this cookbook (and chuckling at all of the recipe names) for meal inspiration when I have no idea what I want to eat.
