Pineapple Pie with the Best Lattice Crust Ever
This is my first attempt of making a pie..I thought of making a pineapple pie because I had a can of pineapple slices at home..But you could do this with fresh pineapple too.The sugar amount is entirely upto you,you could make it as sweet as you like.Then when baking the pineapple juices started oozing out of the pie crust,so to avoid that,you could just cut some thin slices of pineapple and lay them on the top of the filling so that the juice wont come out,BUT Still you care about the look,it tasted divine.You could exactly the same way with any filling as you like..The lattice crust I did is,I started on one side then I went to the other side,But you could just get an idea of the crust and do it to the entire dish all at once.So hope you try this and let me know what you think. Ingrediants: For Filling: Pineapple-3 cups crushed or finely chopped Sugar-1 cup or more Vanilla essence or pineapple essence-2 tsp Lemon juice-2 tsp Corn flour-3 tblspn Salt-a pinch Butter-3 tblspn For Pie Crust: Flour-500 gm Butter-250gm Salt a pinch Sugar-2 tblspn Ice water-6 tblpsn or more. Method: Preheat the oven for 200 degree for 10-15 min. First make the filling,in a sauce pan add pineapple,sugar,essence,salt and cornflour...Mix these together and till it becomes a thick jam like consistency.Add in lemon juice and butter and mix well.Tip this in a bowl and set in fridge to chill. Now on to pie crust,Take flour in a bowl and add salt,sugar and mix well.Now add in cubes of cold butter and using you fingers rub them till they resemble coarse sand.Gradually add in ice water and mix them till it clumb together. Divide this into two equal portion and cover them in plastic wrap and set this in fridge for 45 min. After 45 min,take the dough out of fridge and roll it in round shape slightly more than the pie plate...and place this in the well buttered pie crust and set in fridge. Take the other dough and roll it exactly the same way as you did for the previous one,slice it in strips. Now add the prepared jam filling in the pie crust and cover it with the lattice crust(Check pictures for detailed method) Add blobs of butter over the pie and bake this in the oven for 45-50 min or till golden. Pictorial: For Pie Filling: Add all ingrediants together,cook till thickened like a jam and cool it downFor Pie crust: Rub in butter with your fingers Take one dough and line a pie plate Take other one and cut strips Fill your pie shell with the pie filling. Lay out 4 parallel strips on one side of the pie dough, depending on how thick your strips are, on top of the filling, with about 1/2-inch to 3/4-inch space between them Fold back every other strip.Place one long strip of dough perpendicular to the parallel strips as shown. Unfold the folded strips over the perpendicular strip.Now take the parallel strips that are running underneath the perpendicular strip and fold them back over the perpendicular strip, as shown Lay down a second perpendicular strip of dough next to the first strip, with some space between the strips. Unfold the folded parallel strips over the second strip.Continue this process until the weave is complete on one side. now do this exactly the other side too,until you get the complete pie plate is covered.
