Pineapple Tofu Stir Fry In Spicy Sauce
Pineapples are very delicious on their own. I always love it as it is or cooked as a dish, especially if it is not sweet. A very common use is in sweet and sour dishes, one of the most popular Chinese dishes. My best sweet and sour dish with pineapples is Sweet And Sour Fish. I tried a stir fry of the pineapple with tofu in a spicy sauce and found that it was just as delicious. I love that sweet, sour and spicy taste. Besides, it looks colourful, refreshing and healthy. Just don’t over cook the pineapple. It’s added last and a quick stir would do. Cutting pineapple can be tricky and if you are not sure, please check it out at How To Cut A Pineapple. Never miss out on fresh pineapples. I hardly use canned. Fresh is always the best and healthy. Pineapples are tropical fruit. It’s grown in abundance in Malaysia. They are cheap and very sweet there. Over here in UK, I have to very much depend on my luck. Most of the time, they are green and not sweet……how sad! This recipe is simple and easy. Stir fry is always fun and easy with a good wok or frying pan. So, get one if you don’t have. Ingredients Sprinkle some crushed sea salt on the tofu pieces and let stand for about 15 minutes. Heat up some oil in the frying pan and pan fry them until lightly browned on both sides. Dish up. Add some fried garlic oil to the pan and add the chili and spring onions. Fry until it is fragrant. It just takes a couple of minutes. Add the tofu pieces and fry a little while. Lastly add the pineapple pieces and the chili sauce. Mix well and dish up. I did not add more salt because the tofu is already slightly salty which tastes really good. The sourness comes from the pineapple and the sweetness from the sweet chili sauce. Everything combines beautifully and not too overpowering. Of course you can adjust the seasoning to your taste. Try not to add soya sauce or any dark sauce to the dish otherwise you will spoil the refreshing colour. I love using sea salt. It comes with a very lovely taste. Try to buy the pure sea salt which you can easily crush in between your fingers. It’s much more expensive but worth every penny. It is better for your health.
