Pork Sinigang

If you could remember my post mentioning that I would share what happened to our last bunch of spinach, yeah, it was a long overdue post,  if you could barely to recall, but if not its fine for I can`t recall the date of the post either. Anyway, here`s that dish, I used the spinach instead of kangkong.. Not much veggies on our sinigang, not a fan of okra, and string beans..others do add eggplant.. well for us, we cook what we can eat, for a surely clean plate, and with that its radish, spinach and green chili, and of course tomatoes, onion and garlic..Sad truth is that, we can`t consume buying a pack of eggplant and okra.. surely will see them wither in our fridge, but nonetheless even without them we call it sinigang.. 

We have lots of sinigang mix in our pantry..really a lot, that sometimes I am having a thought of selling it. Sinigang is one of the Philippine dishes that we love, though I haven`t tried doing a shrimp sinigang, for the thought of allergies.. But then again, it just gave me an idea of cooking it next week.. hmm.. hubby loves that dish.. ahh..enough for now.. happy weekend everyone!

Oopps.. I`d love to share that I do add some teaspoon of calamansi/lemon juice.. It tasted even more better compared to purely sinigang mix..well,  cant find any tamarind (sampalok) around here, but if I do I`ll still add calamansi/lemon juice just like my mom does..and my dad too...


Ingredients:
4 to 6 cups water (depending on how much soup you want)
300g pork..we use pork spare ribs
3 cloves garlic, smashed and chopped
1 medium onion, chopped
2 tomatoes, sliced
radish
spinach or kangkong
green chili pepper
sinigang mix ( 1/2 to 1 tsp..again its up to you.)
black, ground pepper
salt
drops of calamansi/lemon juice


Procedure:
1. Pour water in a pot, bring to boil
2. Add garlic, onion, tomatoes and pork, salt and pepper. Let it simmer until pork is halfway tender
3. Add sinigang mix and calamansi/lemon juice, stir
3. Add radish, cover and let it simmer until tender.. add spinach and green chili..cover and turn off the heat..
4. Serve with steamed rice..
