Pumpkin Oatmeal Chocolate Chip Cookies....
I've met my pumpkin cookie match. These are loaded with rolled oats (have I mentioned oatmeal cookies are my very favorite?), super soft and thick, and rich with pumpkin flavor. And loaded with chocolate chips. And they are so moist. I love. love. love. love. Some friends had us over for dinner and we brought these for dessert. I had lost track of how many cookies I'd eaten before we even got there (several disappeared straight from the cooling rack). So on our way home I told my husband he had to take the rest of them to work the next day. I know myself way too well, they wouldn't have lasted past breakfast. Or even the car ride home. By the time we got here there were only a few cookies left. Gasp--not sure how that happened. Who takes just a few cookies into work with them? Like "Hi,all 30 of my coworkers, take a nibble of a cookie that my wife made, they're so good." Not happening. They stayed with me:) still working with my phone's camera. praying mine is fixed today!! Pumpkin Oatmeal Chocolate Chip Cookies adapted slightly from Pumpkin Nook's Cookbook 1 c canned pumpkin 1 c sugar 1/4 c brown sugar 3/4 c shortening 1 egg, beaten 1 3/4 c rolled oats 1 1/2 c flour 1/2 tsp baking soda 1/4 tsp nutmeg 3/4 tsp cinnamon 1 tsp salt 1 1/2 c milk chocolate chips Preheat oven to 400 degrees 1. In a mixing bowl, stir together flour, sugars, baking soda, nutmeg, cinnamon, and salt. 2. Add and mix in shortening, mixing until crumbly. 3. Stir in egg, pumpkin, rolled oats, and chocolate chips. 4. Drop heaping spoonfuls onto baking sheet lined with parchment paper. 5. Bake 12-13 minutes. related searches : Pumpkin
