Roasted Blue Potatoes
My husband, daughter and I went to the Rainbow Blossom farmers market on Sunday and was delighted to find these exotic potatoes there. They’re a little pricey, $4 a pound but worth it, especially if you need more variety in your diet. Sometimes you don’t think much of the price, at least I don’t. Ingredients: 1 lb blue potatoes, washed and cut in half Extra-virgin olive oil. I used the Whole Foods 365 brand since it’s the cheapest I could find. Kosher salt to taste Dried rosemary about 1/4 tsp. About a tsp of garlic powder Pre-heat oven at 350 degrees Fahrenheit. Put on a baking pan. Drizzle with extra-virgin olive oil. Add all other ingredients and mix to coat all the potatoes. Cook for about 30 minutes or until soft. Enjoy! related searches : Roasted
