Rotini with Bacon, Tomato, Green Peas, and Yellow Squash
I was browsing through an issue of Ladies Home Journal when I stumbled across an article on "50 Great Budget Dinners" in the May 2010 issues. I immediately ripped it out and started reading some of the recipes... most of the recipes are items we all have on hand at any given time. I adapted this recipe from the article and added a few more ingredients to spice it up! It turned out to be wonderful and definitely one that I will make in the near future!
Prep: 10 minutes Cook: 20 minutes Ingredients:6 slices of bacon2 yellow squash, diced1 lb. whole wheat rotini1 pint grape tomatoes 1/2 cup frozen green peas1/4 cup grated parmesan1/4 tsp red pepper flakes salt & pepper to tastehandful of basil leaves Directions:1. Cook pasta according to package and set to the side. Serves: 4 2. In a large saute pan fry bacon, set aside to cool, then chop. 3. In the same saute pan add diced yellow squash, grape tomatoes, and peas. Cook until soft. Then add the choped bacon and red pepper flakes to the pan. Stir well and salt and pepper to taste. Add the pasta, torn basil leaves, and parmesan to the pan stir well. Serve hot--enjoy! Side Suggestions: salad
