
Sometime in the late 80's my Mother in law gave me this recipe for Rush Hour Supper that someone had given her, that someone had given them, and so on. Isn't it like that, you get a recipe from someone, that gets it from someone, and then you never know where it originated from. All I know is that this recipe was a staple in our house when my children were growing up. You could make it in no time with few ingredients that you usually had on hand, and it was another way to use hamburger. Remember those days, when you were always looking for another recipe on how to use hamburger. Often times I serve this dish with either String Beans, Buttered Corn, and some type of
bread or
cornbread. You could also just serve it with a salad and bread. Although, I think it is one of those one pot meals that you can just eat by itself and it's great. I do have to say that one of my children was not a fan of this meal growing up. What is so funny today, she is raising four boys that are nothing like she was, a picky eater. Guess who is using this recipe as her go to recipe when she needs a quick meal or actually just because she thinks it is delicious!
Rush Hour Supper
1 lb. ground beef (I use lean ground beef)
1 chopped onion
1 16 oz. can tomatoes (today I buy canned diced tomatoes)
1/2 cup uncooked rice
1/2 cup water
Saute meat and onion in a large skillet. Add tomatoes, rice and water. Season with 1 tablespoon sugar and season to taste with salt and pepper. Cover and cook 25 minutes.
Note: I have a times added corn, ranch style beans, or green peas. My husbands favorite way is to add the corn. My favorite is with the green peas. You pick your favorite!
