  • Break the overnight/leftover rice using the back of a spoon so they don't clump together-keep aside.
  • Place garlic, shallots and salt in a mortar and pound with the pestle to form a paste.
  • Heat the wok add couple spoons of oil,saute the chopped onions til browned followed by the pounded paste. Squeeze out the water from anchovy.
  • Once the raw smell are removed add the diced chicken franks cubes,anchovy and the vegetables. As they become tender pour the sauce and allow the mixture to blend.
  • Finally add the cooked rice and saute well. Adjust the level of salt and add chopped coriander and spring onions.
  • Remove from flame and transfer to serving platter.
