Sabudana and Spinach Vada

Today is Shiva Ratri and I am fasting. Or should I say feasting? :-) I find it amusing that we have such delectable workarounds for meals on our fasting days, that makes fasting seem more sinful :-P Right from Singhare ke atte ki roti, Sabudana vada and Kuttu ke atte ke Pakore, everything is so yum that that abstinence seems absent :-) Today I got to gorge myself with mom-in-law special Sabudana Vadas which remind me of the tagline of a famous Potato chips "No one can eat just one". Here is the recipe:

Ingredients:
Spinach - 100 gm, washed, drained and finely chopped
Sabudana (Sago) - 1 Cup
Singhara (Water chestnut) Flour  - 1 cup
Potatoes - 3 medium sized , boiled and mashed
Ginger - 1 tbsp, finely chopped
Green Chilli - 1, finely chopped
Red Chilli powder - 1/4 tsp
Salt to taste
Oil to deep fry

Method:

Wash the Sabudana. Drain and set aside for an hour.Mix together rest of the ingredients with Sabudana to form a stiff mixture. (Make sure the potatoes have cooled down).Make round patties from this mixture.Heat oil in a wok. Deep fry the patties till golden brown. Serve hot with Mint and Coriander chutney.
