Savory Scallion and Cheddar Cheese Scones - International Scones Incident Party!
Scones, according to wikipedia, are a British quick bread but are of Scottish origin. Most of the time I hear about scones they tend to be sweet in nature with fruit and/or sugar, so I decided to do something a little different and make a savory version that remind me of American style biscuits. My scones aren't ones you'd really have with tea, but more of an accompaniment to a soup or a salad (which is exactly what mine went with... a warm garlic shrimp and romaine lettuce salad, Yum!!). Seeing as I also added in cheese I made sure to make them healthier with whole wheat flour and oats. Savory Scallion and Cheddar Cheese Scones 1 cup whole wheat flour1 cup oats (the instant kind for oatmeal) 1 tablespoon baking powder½ teaspoon baking soda½ teaspoon salt½ cup butter, cold and cut into pieces2 scallions (green onions/spring onions) cleaned and sliced1/4 cup sharp (or old) cheddar cheese, grated1 egg½ cup milkIn a bowl mix flour, oats, baking powder, and baking soda. Add in butter. Using your hands break the butter up into the dry ingredients until it makes a sandy texture (takes about 5 minutes). Add in all of the scallions most of the cheese, reserving a small amount to sprinkle on top of the scones. In another bowl beat the egg and milk together. Pour a little at a time into the dry ingredients and mix before adding in more. It will make a very wet dough. Turn it out onto a well floured surface and knead about 4 or 5 times. Using your hands, pat out the dough into a round circle about 1 inch thick. Take out a round baking sheet (pizza pan) and pour about 1/2 tablespoon of oil on it. Using a napkin, spread the oil around on the pan so it's nice and oiled but not overly so. Place the dough on the baking sheet and press from the center outwards evenly until the entire thing is about 1/2 inch thick. Take a knife and cut the dough like a pizza to make about 8 (or 16 depending how big you want them to be) scones. Sprinkle a little extra grated cheese on top and bake in a preheated oven at 400F for about 15- 20 minutes or until the top is golden brown. Allow to cool before serving. I really suggest serving this with a salad or a good soup depending on the weather :). They are also great as they are for breakfast nice and filling with no need for additional butter!!
