Coconut honey cake

Flour-200 gm

Powdered Sugar-100 gm

Honey-50 gm

Desiccated Coconut-50 gm

Almonds- 3 tblspn chopped

Oil - ¾ cup

Vanilla essence-1 tsp

Baking powder-1 tsp

For Syrup:

Sugar-1 tblpsn

Honey-50 ml

Vanilla essence-1 tsp

Water-30 ml


  • Preheat the oven to 180°C(360°F).Butter the tin generously and dust it with flour on all sides.Set this aside for a moment.

    In a mixing bowl,beat together eggs,sugar,vanilla till light and fluffy.

    Add oil,honey in this and beat again.Throw in desiccated coconut and mix well.

    Sift in flour with baking powder in this mixture and fold gently till combined.

    Pour this in the prepared tin.Throw some almonds in the top and bake for 30-40 min.

    After that take the tin out of the oven and put some desiccated coconut over the top and bake it again for 5 min or till the top gets golden.Take it out of the oven and let it cool.

    Mix honey with sugar,vanilla,water till combined and drizzle this over the top.

    Let this cool completely..Slice and serve..
