Simple, Healthy, and Delicious!

When I first started blogging about food my intentions were to show how easy and inexpensive it is to cook very simple meals that were healthy, quick to make on those busy weeknights, and really delicious besides.



It's always bothered me when I hear people say that they either grab fast food or throw in frozen dinners because they don't have time to cook, don't really know how to cook, or believe it's cheaper. I just think that's sad, and of course it's not true!



We can all cook quick, easy meals that don't take any longer to prepare than driving to a fast food place and waiting in the line. Cooking at home doesn't have to be expensive or complicated. We don't have to use a detailed recipe with 30 ingredients to create a fantastic meal either. Sometimes simple is best.



Today I'm bringing you one of those originally intended kind of meals. I can't give you a recipe because their isn't one. It's just a simple process.





Don't you feel healthier just looking at it? I know I sure felt healthy eating it. This meal took less than 30 minutes from beginning to end to prepare. 


Here's how I made it...


I started a package of long grain and wild rice. While I waited for the water to boil I finely chopped a couple of mushrooms, a handful of chopped parsley and added some fresh ground garlic pepper, and seasoned salt to the mix (all optional). Cooked according to package directions.



I washed, patted dry, and placed 6 tilapia fillets on a large deep cookie sheet sprayed with cooking spray, brushed the tops of the fish lightly with olive oil and sprinkled generously with lemon pepper seasoning, topped each with lemon slice and baked in preheated 400 degree oven for 12-14 minutes.



With less than 5 minutes left for the rice and fish I heated about a tablespoon of olive oil in a large frying pan, added about a teaspoon of minced garlic. I sauteed the garlic for about a minute, and then added a bag of fresh baby spinach, tossed for 1-2 minutes just until wilted.



I placed the fish over a bed of the spinach, added a side of the rice - we had a beautiful, very healthy, delicious dinner all in a half an hour, and servings for 6 for under $20.
