Slow Cooked Mexican-Inspired BBQ Chicken
I love a little barbecue sauce on my Mexican food. If this is something you have not tried, go ahead, try it! Sprinkle a little barbecue sauce on a taco or burrito or gordita. Trust me, you will not be disappointed.
I combined the idea of barbecue ad Mexican flavors and made a delicious slow cooked chicken. The best thing about this dish (second to the taste) was that it cooked all afternoon in the slow cooker and I didn't have to cook dinner. I used chicken thighs because that is what I had in my freezer, but this dish can be made with breasts, legs, thigh, and or wings of chicken. Slow Cooked Mexican-Inspired BBQ Chicken (serves 2) -3 bone in chicken thighs (1-2 per person) -1 medium onion, diced -3 tablespoons chopped fresh cilantro -1 tablespoon ground coriander -1/2 tablespoon ground cumin -1/4 teaspoon ground cayenne pepper -1/2 cup barbecue sauce -1/2 cup salsa -1 tablespoon worcestshire sauce -a shake of salt 1. In the slow cooker pot, add everything except the chicken and stir until well combined. Add in the chicken pieces, cover, and turn the slow cooker on low. Cook for 5 hours (add a few hours to the cooking time if you double or triple the recipe). 2. Serve over brown rice, potatoes (that's how Neil ate it!), or with black beans, sour cream and corn tortillas, which is how I ate it.
